Mundine, Kotowski ink with UTSA softball

The duo joins Demiree Stafford, Brookelynn Meador, Arlette Hernandez, Aubrey Flores, and Jaeden Burnham in the 2025 signing class

SAN ANTONIO—On Friday, UTSA head softball coach Vann Stuedeman announced the signings of Samantha Mundine and Olivia Kotowski, who will join the team ahead of the 2026 campaign.

An outfielder from Luling, Texas, Mundine makes her way to San Antonio after spending two seasons at McNeese.

With the Cowgirls, she was a 2025 first-team All-Southland selection after posting a .380 batting average to go with 65 hits, 30 RBIs, and 13 stolen bases. As a freshman in 2024, she hit the ground running with 57 starts and paced the squad with 56 hits. She also drove in 29 runs and compiled a .311 batting average. She got the job done in the classroom as well, cracking the SLC Commissioner's Honor Roll in 2024 and 2025.

In high school, Mundine was crowned 2021 District Offensive Most Valuable Player and was a First-Team All-District catcher in 2022, as well as a UIL Class 4A All-State selection. She picked up an Academic All-District nod, while ranking as high as 23rd overall on the Extra Inning Softball Elite 100 list. In softball, she lettered three times at Navarro after playing baseball as a freshman and maintained a 3.90 GPA throughout her high school tenure while serving as a member of the Honor Society. Mundine played her club ball with the Bombers.

At UTSA, she will study construction management with the goal of starting her own business. Mundine is the daughter of Elizabeth and John Mundine and has one brother, Drew. Additionally, her father was a 1996 draft pick by the Minnesota Twins.

Olivia Kotowski | 5-9 | P | R/R | Lilburn, Georgia | Parkview HS | South Carolina

Kotowski joins the squad after a freshman season at South Carolina, during which she made an NCAA Super Regional appearance with the team, hosting both the regional and super regional rounds in Columbia. With the Gamecocks, she appeared in five games with two starts, working a 3.15 ERA. She recorded her first collegiate strikeout against Youngstown State on March 5, 2025, and pitched hitless outings against Georgia and Alabama later in the campaign.

She starred for the Panthers at Parkview High School, earning All-Country awards in all four seasons, with a trio of Region Pitcher of the Year Awards. Kotowski was All-Region three times and picked up an All-State nod in both her sophomore and junior campaigns. She was the Parkview Senior Student-Athlete of the Year in 2023 and also a varsity thrower on the track and field team. In the classroom, Kotowski achieved a 3.70 GPA, which landed her on the school's Honor Roll. Additionally, she clubbed with Athletics Gold Tamborra.

Kotowski will study education at UTSA to become a teacher and a softball coach. She also remains heavily involved in the Federation of Christian Athletes and assists with the Special Olympics. She is the daughter of Dawn and Michael Kotowski and has one brother, Devin.
