SAN ANTONIO – UTSA Athletics on Friday announced the hire of Paul Eom as Director of Sports Nutrition. Eom, a Registered Dietitian, oversees a full-service program that serves the nutrition needs of the Roadrunners’ nearly 400 student-athletes.
“We are excited to welcome Paul to our Roadrunner Family as our Sports Dietitian,” said Lisa Campos, UTSA Vice President for Intercollegiate Athletics. “Providing first-class nutritional support and education for our student-athletes in all sports is a top priority for us. Enhancing the nutritional support of our student-athletes is paramount to their success both in competition and in life.”
Eom joins the Roadrunners from IMG Academy in Bradenton, Fla., where he has served as a Performance Dietitian since January 2024. At IMG Academy, Eom provided individual and team nutrition, education, counseling and medical nutrition therapy for his assigned teams, which included four soccer squads, nine baseball teams and the national football team. He performed and assessed body composition measurements and created specific, individualized plans for a number of athletes.
Prior to joining IMG Academy, Eom was the Football Sports Nutrition Fellow at the University of Illinois, including a stint as the Interim Director of Football Nutrition for six months in 2023. During that time, he had full oversight of the Illini football performance nutrition program. Eom conducted individual nutrition consultations to meet each student-athlete’s body composition goals, hydration needs and improve performance. He oversaw fuel station managers and more than 10 student workers in the nutrition area. Eom managed nutrition operations for all home and away football games, practices and lifts.
Eom completed a dietetic internship at Syracuse University during the 2021-22 academic year and also served as a nutrition intern for minor league teams in the Cleveland Guardians system during the spring of 2020.
Eom earned his Bachelor of Science in Culinary Nutrition from Johnson & Wales University in 2020. He participated in the Disney College Program, gaining experience as a chef at Epcot.
